Instructions
Preheat the oven to 190°C (375°F).
Heat a skillet over medium heat and cook sausage until browned, breaking it into crumbles.
Remove sausage and set aside.
In the same skillet, scramble the eggs gently until just set.
Add tortilla chips to the skillet and scatter sausage and eggs evenly over the top.
Sprinkle with grated cheddar cheese.
Bake for 8–10 minutes until the cheese is melted.
Remove from oven and top with salsa, sour cream, avocado slices, and fresh coriander.
Serve immediately while hot.
