Instructions
Preheat oven to 180°C (350°F) and line a muffin tin.
In a bowl, mash the bananas until smooth.
Whisk in eggs, granulated sugar, melted unsalted butter, and vanilla extract.
In a separate bowl, combine plain flour, baking powder, and salt.
Fold dry ingredients into the banana mixture until just combined.
Fill each muffin liner halfway with batter, add a piece of dark chocolate, then top with more batter.
To make the crumb topping, rub unsalted butter into plain flour and granulated sugar until crumbly.
Sprinkle crumb topping generously over each muffin.
Bake for 22–25 minutes until golden and set on top.
Cool slightly before serving to allow the chocolate center to remain molten.
