Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onions and cook until soft and translucent.
Add garlic and ginger and cook for 1 minute until fragrant.
Add sliced carrots, salt, pepper, and nutmeg. Stir well.
Pour in vegetable stock and simmer for 25 minutes until carrots are very tender.
Blend the soup until completely smooth.
Stir in cream and adjust seasoning.
Serve hot with a drizzle of cream on top.
