Instructions
Pat the lamb chops dry with paper towels.
Mix olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.
Rub the herb mixture thoroughly over the lamb chops.
Heat a heavy pan or grill over medium-high heat.
Sear lamb chops for 3–4 minutes per side until well browned.
Transfer to a preheated oven at 200°C (400°F) and roast for 8–10 minutes for medium-rare.
Rest the lamb for 5 minutes before serving.
