Instructions
Cook basmati rice according to package instructions and allow to cool slightly.
Chop lettuce, tomato, cucumber, and onion into bite-sized pieces.
Combine vegetables in a large bowl.
Add olives and pepperoncini if using.
Whisk olive oil, lemon juice, dried oregano, salt, and black pepper to make the dressing.
Toss salad lightly with dressing or serve dressing on the side.
Top salad with crumbled feta cheese.
Serve with basmati rice on the side.
