Asian Vegetable Stir-Fry

  • Heat a drizzle of oil in a wok or large frying pan over high heat.

  • Add sliced onion and stir-fry for 2 minutes.

  • Add sliced bell pepper, sliced zucchini, and sliced carrot and stir-fry for 3-4 minutes.

  • Add sliced mushrooms and stir-fry for 2 minutes.

  • Mix together soy sauce, honey, and cornstarch.

  • Pour the soy sauce mixture over the vegetables and stir-fry for 2 more minutes, until the sauce thickens.

  • Serve hot over rice or noodles, garnished with chopped scallions or cilantro.
