Halloumi with Jamaican Seasoned Vegetables and Pineapple over Rice

  • Cook 200 grams of rice according to the package instructions. Once cooked, keep warm.

  • Cut 250 grams of halloumi cheese into slices. Grill or fry the halloumi until golden brown on each side, then set aside.

  • Slice 1 bell pepper and 1 onion into strips. Cut a few slices of pineapple into bite-sized pieces.

  • Heat a tablespoon of olive oil in a pan over medium heat. Add the sliced pepper and onion, cooking until they start to soften.

  • Stir in the pineapple pieces and 1 tablespoon of Jamaican jerk seasoning, cooking for another 5 minutes until everything is nicely caramelized.

  • To serve, divide the cooked rice among plates. Top with the grilled halloumi slices and the pepper, onion, and pineapple mix.

  • Sprinkle with sesame seeds before serving.
