Halloumi with Jamaican Seasoned Vegetables and Pineapple over Rice

Cook 200 grams of rice according to the package instructions. Once cooked, keep warm.

Cut 250 grams of halloumi cheese into slices. Grill or fry the halloumi until golden brown on each side, then set aside.

Slice 1 bell pepper and 1 onion into strips. Cut a few slices of pineapple into bite-sized pieces.

Heat a tablespoon of olive oil in a pan over medium heat. Add the sliced pepper and onion, cooking until they start to soften.

Stir in the pineapple pieces and 1 tablespoon of Jamaican jerk seasoning, cooking for another 5 minutes until everything is nicely caramelized.

To serve, divide the cooked rice among plates. Top with the grilled halloumi slices and the pepper, onion, and pineapple mix.

Sprinkle with sesame seeds before serving.
