  • Preheat the oven to 180°C/350°F/Gas Mark 4. Chop the potatoes into wedges.

  • Place the potatoes on a baking tray and drizzle with oil. Sprinkle with half the mixed herbs. Cook in the oven for 35 minutes, turning halfway.

  • In a mixing bowl, combine the minced pork, garlic, remaining mixed herbs, and breadcrumbs. Mix well and divide into two balls.

  • Flatten the pork balls and place them onto a baking tray. Cook for 15 minutes and flip halfway through.

  • Make the salad by thinly slicing the apple and adding it to the rocket. Add the cider vinegar and drizzle with oil.

  • To serve, split the potato wedges between two plates. Place the cooked pork burgers on the buns and top with cheddar cheese. Serve with the apple rocket salad on the side.
