Juicy BBQ Pork Burger with Herb Potato Wedges and Apple Rocket Salad

Preheat the oven to 180°C/350°F/Gas Mark 4. Chop the potatoes into wedges.

Place the potatoes on a baking tray and drizzle with oil. Sprinkle with half the mixed herbs. Cook in the oven for 35 minutes, turning halfway.

In a mixing bowl, combine the minced pork, garlic, remaining mixed herbs, and breadcrumbs. Mix well and divide into two balls.

Flatten the pork balls and place them onto a baking tray. Cook for 15 minutes and flip halfway through.

Make the salad by thinly slicing the apple and adding it to the rocket. Add the cider vinegar and drizzle with oil.

To serve, split the potato wedges between two plates. Place the cooked pork burgers on the buns and top with cheddar cheese. Serve with the apple rocket salad on the side.
