BBQ Sausage and Veggie Skewers with Tangy Salad

  • Preheat the oven to 180°C/350°F/Gas Mark 4.

  • Chop the onion and pepper into bite-sized chunks.

  • Slice the sausages into 4 pieces.

  • Mix the vegetables and sausages in a box with the BBQ sauce.

  • Make the skewers by threading the BBQ mixture onto the bamboo skewers.

  • Place the skewers on a baking tray and cook for 25 minutes, turning them over halfway through.

  • Make the salad dressing by mixing the cider vinegar with a pinch of salt and pepper and a drizzle of oil.

  • Place the skewers onto two plates along with half the pea shoots on each. Drizzle the salad dressing over the pea shoots.
