BBQ Sausage and Veggie Skewers with Tangy Salad

Preheat the oven to 180°C/350°F/Gas Mark 4.

Chop the onion and pepper into bite-sized chunks.

Slice the sausages into 4 pieces.

Mix the vegetables and sausages in a box with the BBQ sauce.

Make the skewers by threading the BBQ mixture onto the bamboo skewers.

Place the skewers on a baking tray and cook for 25 minutes, turning them over halfway through.

Make the salad dressing by mixing the cider vinegar with a pinch of salt and pepper and a drizzle of oil.

Place the skewers onto two plates along with half the pea shoots on each. Drizzle the salad dressing over the pea shoots.
