Filo Quiche and Wedges

Filo Pastry Eggs Spinach Brown Onion Feta Nutmeg Potatoes Cheddar Cheese Spring Onion
  • Preheat your oven to 180°C (350°F).

  • Scrub and cut potatoes into wedges.

  • In a bowl, toss the potato wedges with olive oil, salt, and pepper.

  • Spread the wedges in a single layer on a baking sheet.

  • Bake for 20-25 minutes or until golden and crispy, flipping halfway through.

  • In a pan, sauté chopped onions until translucent. Add spinach and cook until wilted. Allow excess moisture to drain.

  • In a bowl, whisk eggs and season with salt, pepper, and a pinch of nutmeg.

  • Crumble feta cheese into the egg mixture and add the sautéed spinach and onions. Mix well.

  • Layer filo sheets in a greased baking dish, brushing each sheet with melted butter or oil as you go.

  • Pour the egg and spinach mixture over the filo layers.

  • Bake in the preheated oven for 25-30 minutes or until the quiche is set and the filo is golden brown.

  • During the last 5 minutes of the potatoes baking, sprinkle grated cheddar cheese over the wedges.

  • Remove from the oven and garnish with chopped spring onions.

  • Serve your Cheesy Wedges alongside the Filo Quiche. Enjoy!
