Filo Quiche and Wedges

Preheat your oven to 180°C (350°F).

Scrub and cut potatoes into wedges.

In a bowl, toss the potato wedges with olive oil, salt, and pepper.

Spread the wedges in a single layer on a baking sheet.

Bake for 20-25 minutes or until golden and crispy, flipping halfway through.

In a pan, sauté chopped onions until translucent. Add spinach and cook until wilted. Allow excess moisture to drain.

In a bowl, whisk eggs and season with salt, pepper, and a pinch of nutmeg.

Crumble feta cheese into the egg mixture and add the sautéed spinach and onions. Mix well.

Layer filo sheets in a greased baking dish, brushing each sheet with melted butter or oil as you go.

Pour the egg and spinach mixture over the filo layers.

Bake in the preheated oven for 25-30 minutes or until the quiche is set and the filo is golden brown.

During the last 5 minutes of the potatoes baking, sprinkle grated cheddar cheese over the wedges.

Remove from the oven and garnish with chopped spring onions.
