Cheesy Baked Veggie Orzo
Orzo
Bell Pepper
Brown Onion
Green Olives
Chilli Flakes
Dried Oregano
Chopped Tomatoes
Vegetable Stock
Mozzarella

Heat oven to 200C/180C fan/gas 6.

Chop the peppers, dice the onion, roughly chop the olives.

Add the orzo into a casserole dish, then stir in oil, peppers, olives, chili flakes, and oregano.

Add in the chopped tomatoes and 400ml of water.

Mix it together and bake for 30 mins until the pasta is almost cooked. Take it out of the oven, stir and cook for a further 5 mins.

Take the orzo out of the oven and top with mozzarella, then cook until melted and bubbling.

Slip between two pasta dishes to serve.
