Cheesy Baked Veggie Orzo

Orzo Bell Pepper Brown Onion Green Olives Chilli Flakes Dried Oregano Chopped Tomatoes Vegetable Stock Mozzarella
  • Heat oven to 200C/180C fan/gas 6.

  • Chop the peppers, dice the onion, roughly chop the olives.

  • Add the orzo into a casserole dish, then stir in oil, peppers, olives, chili flakes, and oregano.

  • Add in the chopped tomatoes and 400ml of water.

  • Mix it together and bake for 30 mins until the pasta is almost cooked. Take it out of the oven, stir and cook for a further 5 mins.

  • Take the orzo out of the oven and top with mozzarella, then cook until melted and bubbling.

  • Slip between two pasta dishes to serve.
