Vegetarian Spaghetti Bolognese

Heat a tablespoon of oil in a large pan over medium heat.

Add chopped onions, garlic, and carrots, and sauté until softened, about 5-7 minutes.

Add the plant-based mince and cook for another 5 minutes until browned.

Stir in the tomato paste, chopped tomatoes, and a splash of red wine (optional).

Add Italian seasoning, salt, pepper, and any other desired spices. Simmer on low heat for 20-25 minutes, allowing the sauce to thicken and flavors to combine.

Meanwhile, cook the spaghetti according to the package instructions in salted boiling water.

Once the sauce is ready, taste and adjust the seasoning if needed.

Drain the spaghetti and divide it between plates. Top with the vegetarian Bolognese sauce.

Garnish with freshly grated Parmesan (or plant-based cheese) if desired and serve hot.
