Vegetarian Spaghetti Bolognese

  • Heat a tablespoon of oil in a large pan over medium heat.

  • Add chopped onions, garlic, and carrots, and sauté until softened, about 5-7 minutes.

  • Add the plant-based mince and cook for another 5 minutes until browned.

  • Stir in the tomato paste, chopped tomatoes, and a splash of red wine (optional).

  • Add Italian seasoning, salt, pepper, and any other desired spices. Simmer on low heat for 20-25 minutes, allowing the sauce to thicken and flavors to combine.

  • Meanwhile, cook the spaghetti according to the package instructions in salted boiling water.

  • Once the sauce is ready, taste and adjust the seasoning if needed.

  • Drain the spaghetti and divide it between plates. Top with the vegetarian Bolognese sauce.

  • Garnish with freshly grated Parmesan (or plant-based cheese) if desired and serve hot.
