Minestrone Soup

  • Heat olive oil in a large pot over medium heat. Add chopped onions, carrots, and celery; cook until softened.

  • Add minced garlic and cook for 1 minute until fragrant.

  • Pour in vegetable stock and diced tomatoes with their juice, bring to a boil.

  • Add chopped green beans, diced zucchini, and drained and rinsed kidney beans; simmer until vegetables are tender.

  • Stir in chopped spinach and cooked small pasta; season with salt and pepper to taste.

  • Serve hot, garnished with grated Parmesan cheese if desired.
