Red Lentil and Black Bean Burrito with Guacamole

In a large pot, heat olive oil over medium heat. Add finely chopped onions and bell peppers. Sauté until softened.

Add minced garlic, ground paprika, ground coriander, and ground cumin to the pot. Stir and cook for 2 minutes until fragrant.

Pour in passata and vegetable stock. Add red lentils, thyme, and black beans. Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes or until lentils are tender.

While the lentil and black bean mixture is simmering, prepare the guacamole. In a bowl, mash ripe avocados and mix in diced tomatoes, chopped red onion, chopped red chilli, and lime juice. Season with salt to taste.
