Red Lentil and Black Bean Burrito with Guacamole

  • In a large pot, heat olive oil over medium heat. Add finely chopped onions and bell peppers. Sauté until softened.

  • Add minced garlic, ground paprika, ground coriander, and ground cumin to the pot. Stir and cook for 2 minutes until fragrant.

  • Pour in passata and vegetable stock. Add red lentils, thyme, and black beans. Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes or until lentils are tender.

  • While the lentil and black bean mixture is simmering, prepare the guacamole. In a bowl, mash ripe avocados and mix in diced tomatoes, chopped red onion, chopped red chilli, and lime juice. Season with salt to taste.

  • Warm the tortillas according to package instructions.

  • To assemble the burritos, spoon the lentil and black bean mixture onto each tortilla. Top with a generous spoonful of guacamole.

  • Fold in the sides of the tortilla and then roll it up tightly.
