Cook the noodles according to package instructions. Drain and set aside.

In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, minced garlic, and grated ginger.

Heat vegetable oil in a large skillet over medium heat. Add the cooked noodles and the sauce, tossing to coat evenly.

Cook for 3-5 minutes, stirring frequently, until the noodles are heated through and the sauce has thickened slightly.
