Mexican Chicken Fajita Bowl

Chicken Breast Bell Pepper Brown Onion Basmati Rice Cheddar Cheese Mexican Spice
  • Bring a pot of water to boil. Add the rice and cook until the water is back to boil.

  • Lower to medium heat. Cook for a further 15 minutes.

  • Cut the onion and pepper into strips. Cut the chicken into strips.

  • Heat a frying pan on high. Once hot add the chicken. Cook until sealed.

  • Add the pepper and onion. Cook until softened. Add the Mexican spice mix and cook for a further 1 minute.

  • Split the rice into two bowls, top with the Fajita chicken and then grate the cheese over.
