Hoisin Chicken Noodles with Crunchy Cashews

  • Prepare the vegetables. Cut the pepper into strips. Half the sugar snaps. Grate the ginger. Crush the garlic. Slice the spring onion.

  • Bring a pot of water to boil. Add the noodle and cook as per the packet's instructions.

  • Dice the chicken. Heat a frying pan. Once hot, add the chicken and pepper. Cook for 10 minutes until golden.

  • Add the garlic and ginger and fry for 1 minute.

  • Make the sauce by mixing the hoisin sauce, honey, soy sauce, and 50ml of water in a bowl.

  • Add the noodles, sugar snaps, and sauce to the chicken. Stir and heat for 3 minutes.

  • Dish into two bowls and top with the cashews and spring onion.
