Avocado and Bacon Toast

Eggs Avocado Bacon Sourdough
  • Pre-heat the oven to 180 degrees and bring a pot of water to boil.

  • Place the bacon on a baking tray and place in the oven. Cook for 12 minutes.

  • Once the water is boiling, reduce the heat, stir the water to make a whirlwind and crack an egg into it.

  • Cook until preferred. 3 minutes for a runny egg. Take out and set aside on a kitchen towel to absorb the excess water.

  • Split the avocado in half, remove the pit and spoon into a bowl.

  • Add salt and pepper to taste and mix with a fork.

  • Toast the bread.

  • Spread the avocado mixture onto the toast.

  • Place two pieces of toast on each plate and top them both with bacon and then add an egg.
