  • Preheat your oven to 180°C (350°F).

  • In a pan, sauté chopped onions until translucent. Add spinach and cook until wilted. Allow excess moisture to drain.

  • In a bowl, whisk eggs and season with salt, pepper, and a pinch of nutmeg.

  • Crumble feta cheese into the egg mixture and add the sautéed spinach and onions. Mix well.

  • Layer filo sheets in a greased baking dish, brushing each sheet with melted butter or oil as you go.

  • Pour the egg and spinach mixture over the filo layers.

  • Sprinkle grated cheddar cheese on top.

  • Bake in the preheated oven for 25-30 minutes or until the quiche is set and the filo is golden brown.

  • Allow it to cool slightly before slicing.

  • In a large bowl, combine lettuce, tomatoes, cucumber, and bell peppers.

  • In a small bowl, whisk together mustard, mayo, lemon juice, and oil to make the dressing.

  • Pour the dressing over the salad and toss until well coated.
