Crispy Parmesan Chicken with Tomato Herb Sauce

  • Preheat the oven to 200°C/400°F/Gas Mark 6.

  • Chop the garlic and mix it with the breadcrumbs and grated Parmesan.

  • Coat the chicken in the breadcrumb mixture and place it on a baking tray.

  • Bake the chicken in the oven for 25-30 minutes, until golden brown and crispy.

  • While the chicken is cooking, make the sauce. Mix the tomato passata, chicken stock and mixed herbs in a saucepan and bring to a simmer.

  • Simmer the sauce for 10-15 minutes, until it has thickened slightly.

  • Serve the chicken with the tomato herb sauce and a side of chips.
