Crispy Parmesan Chicken with Tomato Herb Sauce

Preheat the oven to 200°C/400°F/Gas Mark 6.

Chop the garlic and mix it with the breadcrumbs and grated Parmesan.

Coat the chicken in the breadcrumb mixture and place it on a baking tray.

Bake the chicken in the oven for 25-30 minutes, until golden brown and crispy.

While the chicken is cooking, make the sauce. Mix the tomato passata, chicken stock and mixed herbs in a saucepan and bring to a simmer.

Simmer the sauce for 10-15 minutes, until it has thickened slightly.

Serve the chicken with the tomato herb sauce and a side of chips.
