Mediterranean Beans on Toast
Butter Beans
Chopped Tomatoes

Crusty Italian Roll

Heat olive oil in a pan over medium heat. Add chopped onions and green peppers, and sauté until soft.

Add garlic and sauté for another minute until fragrant.

Stir in canned tomatoes, paprika, and butter beans. Simmer for 10-12 minutes until thickened and heated through.

Slice the crusty bread roll and toast lightly if desired.

Top the bread with the butter bean mixture.

Finish by crumbling feta cheese over the top of the butter beans.
