Mediterranean Beans on Toast

Butter Beans Chopped Tomatoes Brown Onion Bell Pepper Feta Crusty Italian Roll Garlic Clove Paprika
  • Heat olive oil in a pan over medium heat. Add chopped onions and green peppers, and sauté until soft.

  • Add garlic and sauté for another minute until fragrant.

  • Stir in canned tomatoes, paprika, and butter beans. Simmer for 10-12 minutes until thickened and heated through.

  • Slice the crusty bread roll and toast lightly if desired.

  • Top the bread with the butter bean mixture.

  • Finish by crumbling feta cheese over the top of the butter beans.

  • Serve immediately.
