Beef and Vegetable Pilaf

Bring a pot of water to boil. Add 50g of Basmati rice, bring to boil and then reduce to medium heat and cook for 12 minutes.

Dice one onion and two garlic cloves. Trim 50g of green beans.

When the rice has 5 minutes remaining, add the green beans.

Heat a frying pan on high. Once hot, fry the onion until golden and then add 250g of beef mince. Cook for 5 minutes or until browned.

Reduce the heat and add the garlic, rogan josh paste, and chilli flakes. Fry for 1 minute.

Add 100ml of water, beef stock, and two diced tomatoes. Simmer for 5 minutes or until thickened. Combine the rice and beef mixture and stir until evenly mixed.

Split the pilaf between two bowls and top with a tablespoon of mango chutney each.
