Halloumi Burger with Roasted Cauliflower

Preheat your oven to 200°C (390°F).

Cut cauliflower into florets, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 20-25 minutes until golden brown.

While the cauliflower is roasting, prepare the sesame mayo dressing by mixing mayonnaise, sesame oil, and a pinch of sesame seeds. Set aside.

Slice the halloumi into thick slices.

Heat a pan over medium-high heat and cook the halloumi slices until golden and slightly crispy, about 2-3 minutes per side.

Split brioche buns and lightly toast them.

Assemble the Halloumi Burgers by placing halloumi slices on the bottom bun. Add your favorite burger toppings like lettuce, tomato, and red onion.

Drizzle sesame mayo dressing over the halloumi slices and top with the other half of the bun.
