Halloumi Burger with Roasted Cauliflower

  • Preheat your oven to 200°C (390°F).

  • Cut cauliflower into florets, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 20-25 minutes until golden brown.

  • While the cauliflower is roasting, prepare the sesame mayo dressing by mixing mayonnaise, sesame oil, and a pinch of sesame seeds. Set aside.

  • Slice the halloumi into thick slices.

  • Heat a pan over medium-high heat and cook the halloumi slices until golden and slightly crispy, about 2-3 minutes per side.

  • Split brioche buns and lightly toast them.

  • Assemble the Halloumi Burgers by placing halloumi slices on the bottom bun. Add your favorite burger toppings like lettuce, tomato, and red onion.

  • Drizzle sesame mayo dressing over the halloumi slices and top with the other half of the bun.

  • Serve the Halloumi Burgers with Roasted Cauliflower alongside a side salad of mixed leaves and cherry tomatoes.
