Halloumi Flatbread Wrap

Heat a grill pan over medium-high heat. Slice 200 grams of halloumi cheese into thick strips and grill until golden brown on both sides, about 2-3 minutes per side. Set aside.

While the halloumi is grilling, prepare the vegetables. Thinly slice one large red bell pepper and one red onion. Wash and dry a few leaves of lettuce.

Warm 4 large flatbreads in a dry skillet or microwave for a few seconds to make them pliable.

Assemble the wraps: Lay a flatbread on a flat surface, place a few lettuce leaves in the center, add some slices of grilled halloumi, and top with slices of raw pepper and onion.

Fold the flatbread over the filling, tucking in the sides to hold the ingredients. If desired, you can lightly grill the assembled wrap on the skillet to warm it through and give it a slight crisp.

Serve immediately, or wrap in foil for an on-the-go meal.
