Mediterranean Falafel Pita

Pre-heat the oven at 180 degrees

Make the falafel mix by combining the chickpeas, onion, garlic, lemon juice, oil, cumin, coriander, and salt in a food processor. Blend until smooth.

Transfer the mixture to a bowl and stir in the flour. Mix until well combined.

Form the mixture into small balls and flatten them slightly to form patties.

Place the patties on a baking tray and cook in the oven for 20 minutes. Turn half way.

Toast the pitta bread.

Thinly slice the tomato and cucumber.

Spread the hummus on the bottom of the bread, add a layer of lettuce, add the falafel, them top with the cucumber, tomato and tzatziki.
