Thai Pork Tacos with Cucumber Salsa

  • Heat a frying pan on high. Add the pork mince and cook for 5 minutes until brown.

  • Slice the cucumber. Crush the peanuts. Slice the lettuce. Grate the ginger and crush the garlic.

  • Add the Thai spice, ginger and garlic to the pan and fry for 30 seconds.

  • Add two tablespoons of water, soy sauce and sugar. Stir together and cook for 2 minutes.

  • Split the mince between all tortillas, top with the salsa and then grate the cheese over.
