  • Start by cooking the vegetarian sausages according to the package instructions. Typically, this involves pan-frying them in a little oil over medium heat until they're golden and cooked through.

  • For the hashbrowns, either prepare homemade ones or cook store-bought hashbrowns in a separate pan according to the package instructions until they are crispy and golden brown.

  • While the sausages and hashbrowns are cooking, bring a pan of water to a gentle boil. Crack two eggs into the water and poach them for about 3-4 minutes for soft yolks, or longer for firmer yolks.

  • Toast two bread rolls until they are lightly golden and crispy.
