Preheat the oven to 200°C (392°F).

Slice the halloumi and courgette, and chop the onion and pepper.

Mix gochujang, crushed garlic, and honey in a bowl to create the sauce.

Spread the gochujang sauce over the flatbread.

Top with sliced halloumi, courgette, onion, and pepper. Sprinkle mixed herbs over the top.

Bake in the oven for 15-20 minutes, until the edges are crispy and the cheese is golden.

Serve hot, drizzled with a bit more honey if desired.
