  • Heat a tablespoon of oil in a large pot over medium heat.

  • Add chopped onions, garlic, and ginger, and sauté until golden brown.

  • Add the plant-based chicken pieces and cook until browned.

  • Stir in the spices (turmeric, cumin, coriander, chili powder, and garam masala) and cook for 2 minutes.

  • Add chopped tomatoes and water, bring to a boil, then reduce heat and simmer for 20 minutes, or until the plant-based chicken is tender.

  • In the meantime, cook the rice according to the package instructions.

  • Heat the pappadums in the oven or microwave according to the package instructions.

  • Serve the plant-based chicken curry over the cooked rice with pappadums on the side.
