Spicy Plant-Based Chicken Curry

Heat a tablespoon of oil in a large pot over medium heat.

Add chopped onions, garlic, and ginger, and sauté until golden brown.

Add the plant-based chicken pieces and cook until browned.

Stir in the spices (turmeric, cumin, coriander, chili powder, and garam masala) and cook for 2 minutes.

Add chopped tomatoes and water, bring to a boil, then reduce heat and simmer for 20 minutes, or until the plant-based chicken is tender.

In the meantime, cook the rice according to the package instructions.

Heat the pappadums in the oven or microwave according to the package instructions.

Serve the plant-based chicken curry over the cooked rice with pappadums on the side.
