Spiced Halloumi Tacos with Mango Chutney Dressing

  • Slice the peppers into chunks. Crush the garlic. Slice the Halloumi.

  • Heat a frying pan on high. Once hot add the Halloumi. Cook for 3 minutes on each side and take place to the side.

  • Add the onion to the pan and fry for 3 minutes. Add peppers and fry for 6 minutes.

  • Make the dressing. In a bowl, mix the mango chutney and mayonnaise.

  • Cut the lettuce into slices. Dice the tomato.

  • Add the korma paste and garlic to the peppers and fry for 2 minutes.

  • To serve, place 3 small tortillas or 2 large ones onto a plate. Spread the dressing mixture over the tortillas. Evenly distribute the peppers between the tortillas. Add the halloumi and top with tomatoes and lettuce.
