Creamy Chorizo Gnocchi with Spinach and Tomato Sauce

  • Bring a pot of water to boil. Thinly slice the shallot, crush the garlic, and tear the mozzarella.

  • Add the gnocchi and cook for 2-3 minutes, until the gnocchi floats.

  • Heat a frying pan on high. Once hot, add the shallot and chorizo then fry for 3 minutes. Add the garlic and fry for 1 minute.

  • Add the chopped tomatoes, chicken stock, and chilli flakes.

  • Bring to a boil and then reduce the heat to medium and simmer for 10 minutes.

  • Add the gnocchi and stir in the spinach.

  • Split the pasta into two bowls and then top with the mozzarella.
