Creamy Chorizo Gnocchi with Spinach and Tomato Sauce
Shallot
Garlic Clove
Mozzarella
Gnocchi
Chorizo
Chopped Tomatoes
Chicken Stock
Chilli Flakes

Bring a pot of water to boil. Thinly slice the shallot, crush the garlic, and tear the mozzarella.

Add the gnocchi and cook for 2-3 minutes, until the gnocchi floats.

Heat a frying pan on high. Once hot, add the shallot and chorizo then fry for 3 minutes. Add the garlic and fry for 1 minute.

Add the chopped tomatoes, chicken stock, and chilli flakes.

Bring to a boil and then reduce the heat to medium and simmer for 10 minutes.

Add the gnocchi and stir in the spinach.

Split the pasta into two bowls and then top with the mozzarella.
