Hoisin Beef Stir-Fry with Green Beans and Lime Rice

  • Trim the green beans and cut in half. Zest and half the lime. Crush the garlic.

  • Bring a pot of water to boil. Add the rice then bring to boil, reduce the heat to medium. Cook for a further 12 minutes.

  • Heat a frying pan on high. Once hot add the beef then cook for 5 minutes, until brown.

  • Add the green beans and Thai spice, and cook for 5 minutes. Add the garlic, chicken stock and 100ml of water.

  • Bring to boil then reduce heat to medium and simmer for 5 minutes.

  • Take off the heat and stir in the honey, hoisin sauce and juice of half a lime.

  • To serve, divide the cooked rice between two bowls and top with the beef stir-fry. Sprinkle the lime zest over the rice and stir it through before eating.
