Thai-style Beef and Vegetable Bowl

Red Onions Bell Pepper Ginger Beef Mince Jasmine Rice Thai Spice Chicken Stock Sugar Snap Peas Lime Soy Sauce Caster Sugar
  • Bring a pot of water to boil. Cut the bell pepper into strips, dice the red onion, and grate the ginger.

  • Heat a frying pan on high. Add the Beef Mince and cook for 5 minutes.

  • Add the jasmine rice to the pot of boiling water. Reduce the heat to medium and cook for 12 minutes.

  • Add the red onion and bell pepper to the frying pan and cook for 8 minutes.

  • Add the grated ginger, Thai spice mix, chicken stock, sugar snap peas, and 50ml of water. Cook for 5 minutes. Zest and halve the lime, then mix the caster sugar and soy sauce.

  • Take the pan off the heat and stir in the soy sauce mixture and squeeze the lime juice. Mix the lime zest into the rice.

  • Split the rice into two bowls and top with the beef and vegetable mixture.
