Golden Crispy Chicken with Garlic Mash and Charred Green Beans

Preheat the oven to 180°C/350°F/Gas Mark 4.

Prepare the vegetables: trim the green beans and chop the potatoes into even sizes.

Bring a pot of water to boil and cook the potatoes for 20 minutes until soft.

Place the chicken in between two sheets of baking paper and beat it until flat.

Dip the chicken in egg and cover it with breadcrumbs. Place it on a baking tray and cook it in the oven for 30 minutes, turning it over halfway through.

Heat a frying pan on high heat. Once hot, add the green beans to the frying pan and cook for 3 minutes until charred.

Once the potatoes are cooked, drain the water. Crush the garlic and add it, along with some butter and milk, to the potatoes. Mash until smooth.

To serve, split the garlic mash onto two plates, add the charred green beans, top with the golden crispy chicken and then drizzle with sweet chilli sauce.
