Golden Crispy Chicken with Garlic Mash and Charred Green Beans

  • Preheat the oven to 180°C/350°F/Gas Mark 4.

  • Prepare the vegetables: trim the green beans and chop the potatoes into even sizes.

  • Bring a pot of water to boil and cook the potatoes for 20 minutes until soft.

  • Place the chicken in between two sheets of baking paper and beat it until flat.

  • Dip the chicken in egg and cover it with breadcrumbs. Place it on a baking tray and cook it in the oven for 30 minutes, turning it over halfway through.

  • Heat a frying pan on high heat. Once hot, add the green beans to the frying pan and cook for 3 minutes until charred.

  • Once the potatoes are cooked, drain the water. Crush the garlic and add it, along with some butter and milk, to the potatoes. Mash until smooth.

  • To serve, split the garlic mash onto two plates, add the charred green beans, top with the golden crispy chicken and then drizzle with sweet chilli sauce.
