Bean Burger with Fries and Coleslaw

Preheat the oven to 200°C (400°F).

Peel and cut potatoes into thin fries. Toss them with olive oil, salt, and pepper. Spread them in a single layer on a baking sheet. Bake for 25-30 minutes or until golden and crispy.

While the fries are baking, prepare the coleslaw. Shred red cabbage, carrots, and onions. Mix them with mayo and a bit of salt. Set aside in the refrigerator to chill.

For the bean burgers, rinse and drain kidney beans and black beans. In a food processor, combine the beans, a large egg, breadcrumbs, and your favorite seasonings. Pulse until well combined.

Divide the bean mixture into four portions and shape them into burger patties.

Heat a skillet over medium heat and cook the bean burgers for about 4-5 minutes on each side or until they are browned and cooked through.

In the last few minutes of cooking, place burger buns in the oven to warm.
