Fruity Nutty Cinnamon Banana Bread

Preheat the oven to 175°C (350°F). Grease and line a loaf pan with baking paper.

In a large mixing bowl, mash the ripe bananas with a fork until smooth.

Stir in the vegetable oil and brown sugar until well combined.

Add the baking powder and cinnamon to the mixture and stir.

Gently fold in the mixed dried fruit and chopped mixed nuts until evenly distributed.

In a separate bowl, sift together the flour and salt.

Gradually mix the dry ingredients into the wet mixture until just combined, being careful not to overmix.

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
