  • Preheat the oven to 175°C (350°F). Grease and line a loaf pan with baking paper.

  • In a large mixing bowl, mash the ripe bananas with a fork until smooth.

  • Add the baking powder and cinnamon to the mixture and stir.

  • Gently fold in the mixed dried fruit and chopped mixed nuts until evenly distributed.

  • In a separate bowl, sift together the flour and salt.

  • Gradually mix the dry ingredients into the wet mixture until just combined, being careful not to overmix.

  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.

  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
