Fluffy Pancakes

In a large bowl, combine the flour, baking powder, and caster sugar. Mix well.

In a separate small bowl, beat the egg and add it to the dry ingredients.

Add the milk and butter to the dry ingredients and whisk until smooth.

Heat a frying pan on medium heat and add a drizzle of oil. Once hot, add a spoonful of batter.

Cook the pancake for 1-2 minutes until bubbles appear on the surface, then flip and cook for an additional minute on the other side.

Repeat with the remaining batter, adding more oil to the pan as needed.

Serve the pancakes as a stack and top with your preferred toppings.
