Prawn Fried Rice with Garlic, Lemon, and Coriander

  • Heat a tablespoon of oil in a large frying pan or wok over medium-high heat.

  • Add minced garlic and sauté until fragrant, about 1 minute.

  • Add the prawns and cook until they turn pink, about 2-3 minutes. Remove prawns and set aside.

  • In the same pan, add another tablespoon of oil and then add the cooked rice, breaking up any clumps.

  • Stir-fry the rice for a few minutes until it starts to get crispy.

  • Make a well in the center of the rice and add the beaten eggs. Scramble the eggs and then mix with the rice.

  • Add the prawns back to the pan along with soy sauce, lemon juice, and chopped coriander. Stir well to combine.

  • Serve the fried rice garnished with more coriander and lemon wedges on the side.
