Prawn Fried Rice with Garlic, Lemon, and Coriander

Heat a tablespoon of oil in a large frying pan or wok over medium-high heat.

Add minced garlic and sauté until fragrant, about 1 minute.

Add the prawns and cook until they turn pink, about 2-3 minutes. Remove prawns and set aside.

In the same pan, add another tablespoon of oil and then add the cooked rice, breaking up any clumps.

Stir-fry the rice for a few minutes until it starts to get crispy.

Make a well in the center of the rice and add the beaten eggs. Scramble the eggs and then mix with the rice.

Add the prawns back to the pan along with soy sauce, lemon juice, and chopped coriander. Stir well to combine.

Serve the fried rice garnished with more coriander and lemon wedges on the side.
