Baked Feta Pasta with Peppers and Onions

  • Preheat the oven to 375°F (190°C).

  • Place the block of feta cheese in the center of a baking dish.

  • Surround the feta cheese with cherry tomatoes, sliced bell peppers, and sliced red onion.

  • Drizzle olive oil over the vegetables and feta. Sprinkle with minced garlic, salt, black pepper, and red pepper flakes.

  • Bake in the preheated oven for about 25-30 minutes, or until the tomatoes are softened and the feta is melted.

  • While the vegetables and feta are baking, cook the pasta according to package instructions. Drain and set aside.

  • Remove the baking dish from the oven. Use a fork to gently mash the baked feta and mix it with the roasted vegetables.

  • Add the cooked pasta to the baking dish and toss to combine with the feta and vegetables.

  • Chop fresh basil and sprinkle it over the pasta.
