Mexican Sweet Potato Hash

Garlic Clove Sweet Potato Brown Onion Bell Pepper Red Chilli Mexican Spice Eggs
  • Prepare the vegetables. Cut the sweet potato into 5cm chunks. Dice the onion.

  • De-seed the pepper and slice into strips. Crush the garlic and dice the chilli.

  • Heat a frying pan. Fry the sweet potato for 10 minutes.

  • Add the onion, pepper, garlic, and chilli, along with the Mexican spice. Cover the pan and cook for 8 minutes, stirring occasionally.

  • Create two holes in the pan and break an egg into each hole.

  • Cover again and cook for 8 minutes, or until the egg whites are set and the yolks are still runny.
