Avocado and Egg Toast

Heat a frying pan on medium. Add the eggs.

Cook for 5 minutes or until the egg whites are cooked through.

Split the avocado in half, remove the pit and spoon into a bowl.

Add salt and pepper to taste and mix with a fork.

Toast the bread.

Spread the avocado mixture onto the toast.

Place two pieces of toast on each plate and top them both with an egg.
