Sweet Potato and Peanut Curry

Brown Onion Garlic Clove Sweet Potato Bell Pepper Curry Powder Tomato Puree Chopped Tomatoes Vegetable Stock Peanut Butter Spinach Jasmine Rice
  • Bring a pot of water to boil. Add the rice, bring to boil then reduce heat. Cook for 12 minutes.

  • Heat oil in a large pot over medium heat. Add onion and garlic, and cook until softened.

  • Add sweet potato, red pepper, and curry powder, and cook for 5 minutes.

  • Add tomato puree, vegetable stock, chopped tomatoes and peanut butter, and stir until peanut butter is fully incorporated.

  • Bring to a simmer and cook for 20-25 minutes, or until the sweet potato is tender.

  • Stir in spinach and cook until wilted.
