Smoked Salmon, Avocado and Poached Egg English Muffins

Smoked Salmon Avocado Eggs English Muffin White Vinegar Unsalted Butter
  • Cut avocado in half, remove the pit and scoop out the flesh into a bowl. Mash with a fork and season with salt and pepper.

  • Toast English muffins and spread the mashed avocado on each half.

  • Bring a pot of water to a boil and add white vinegar.

  • Crack the eggs into a small bowl or ramekin, and gently pour them into the boiling water one at a time. Let them cook for about 3 minutes or until the whites are set.

  • Remove eggs with a slotted spoon and place on a paper towel to drain excess water.

  • Place smoked salmon on top of the avocado on each English muffin half.

  • Place one poached egg on top of each salmon slice and sprinkle with salt and pepper.

  • Melt butter in a pan over medium heat and add the poached eggs. Cook until the egg whites are slightly crispy on the bottom.

  • Remove eggs from pan and place them on top of the smoked salmon.

  • Serve immediately and enjoy!
