Smoked Salmon, Avocado and Poached Egg English Muffins

Cut avocado in half, remove the pit and scoop out the flesh into a bowl. Mash with a fork and season with salt and pepper.

Toast English muffins and spread the mashed avocado on each half.

Bring a pot of water to a boil and add white vinegar.

Crack the eggs into a small bowl or ramekin, and gently pour them into the boiling water one at a time. Let them cook for about 3 minutes or until the whites are set.

Remove eggs with a slotted spoon and place on a paper towel to drain excess water.

Place smoked salmon on top of the avocado on each English muffin half.

Place one poached egg on top of each salmon slice and sprinkle with salt and pepper.

Melt butter in a pan over medium heat and add the poached eggs. Cook until the egg whites are slightly crispy on the bottom.

Remove eggs from pan and place them on top of the smoked salmon.

Serve immediately and enjoy!
