Red Bean Curry with Jasmine Rice

Rinse the red beans under cold running water and set them aside.

In a large pot, heat olive oil over medium heat. Add finely chopped onions and sauté until they become translucent.

Add minced garlic and grated ginger to the pot. Stir for about a minute until fragrant.

Sprinkle ground cumin, paprika, and garam masala over the onion mixture. Stir well to coat the onions evenly with the spices.

Add the rinsed red beans to the pot, followed by chopped tomatoes. Stir the ingredients together.

Pour in enough water to cover the beans, bring the mixture to a boil, and then reduce the heat to simmer. Cover and cook for 30-35 minutes or until the beans are tender.

While the beans are cooking, prepare jasmine rice according to package instructions.

Season the bean curry with salt and pepper to taste. Adjust the spice level by adding more cumin, paprika, or garam masala if desired.
